With Thanksgiving and Christmas around the corner, I'm so excited about the holidays I can't stand it. I just introduced my girls' to a not-to-be-mentioned boy band's holiday album a few weeks ago. Let's just say there were in awe as much as I was the first time I heard it a decade ago!
To kick off the season, the girls' and I decided to do a Sunday bake off session. We made truffles and mini cupcakes. For some, the word "truffles" scares people - but these were SO easy. And the mini cupcakes were just the right size for a quick non-guilty sweet pick me up! This was an amazing way to start off a new family tradition: ushering in the holidays with making little snackable bite sized treats for our friends and family!

Holiday Truffles
Ingredients for Truffles
24 ounces semi-sweet chocolate chips
4 ounces of cream cheese
2 teaspoon of vanilla extract
1/3 cup melted unsalted butter
3/4 cup of whole Great Value Milk
Toppings
M&M's® White Peppermint, crushed
coconut flakes
unsalted plain peanuts, crushed

You'll first start by melting the semi-sweet chocolate chips. Do not do this in the microwave - as there is a tendency to burn the chocolate, you wouldn't want that. Instead, boil some water and put a glass bowl on top of it. Put the chocolate in there and it will start melting slowly. Once half of the mixture is melted, add in the cream cheese.

In a separate pot, melt the unsalted butter with the milk on a low setting. Once it starts boiling, take it off and put it into the chocolate/cream cheese mixture along with the vanilla extract.
Mix it until its thoroughly mixed. Spread the mixture into a pan and let it sit in the refridgerator for an hour.
After an hour, take it out and use your hands to make truffle rounds! And then dip it into any topping you want, including the oh-so-yums M&M's® White Peppermint so that you get in the holiday spirit!

You could definitely box these up in a cute giftbox as a holiday treat for a friend!

If that wasn't amazing enough, you can also make some delightful mini-cupcakes. Delish!
Mini Yummy Cupcakes
Ingredients
Pillsbury™ Funfetti® Holiday Cake Mix
3 whole eggs
1/3 cup of oil
1 cup of water
Toppings
Pillsbury™ Funfetti® Holiday Vanilla Flavored Frosting
M&M's® Holiday Peanut
Preheat the oven at 350. Mix the cake mix, eggs, oil, and water until well blended. Bake per instructions on the box.

If you have some little helpers, you can distract them by giving them the mini cupcake liners to "help" you out.

Let it cool for 15 minutes. Use a ziplock bag and add the frosting in there. Cut the tip and put a circle of frosting. To add a festive cheer, add an M&M's® Holiday Peanut.
