During the week, our family embeds a grab-and-go breakfast on most days for the first meal of our day. Getting four kids ready with school bags and daycare supplies takes a lot of effort in the morning. Which means on the weekends, our family of six loves to take the time to enjoy a big breakfast.
While chocolate chip pancakes and croissant egg and cheese sandwiches typically top the list on the weekends, one of our favorite breakfasts are bennies! Who doesn't love a delicious eggs benedict?
The perfect benny requires the ability to carefully coordinate the cooking of the perfect skillet ham, toasted English muffins, and eggs poached to your desired "doness" drizzled with creamy Hollandaise sauce.
With four hungry bellies in the morning, you can bet that this orchestration of cooking needs to happen quick in our household. I'm sharing with you a few shortcuts for time savings and cleanup for the most delicious, shortcut eggs benedict.
First, find English toast that is already split so that you won't have to find that serrated knife. Finding pre-sliced ham is also a time saver as well!
For the eggs, don't poach them. Instead, make them sunny side up!
In my recipe, you'll notice that I didn't do any fancy garnishing with parsley or green onion, which you can do!

Shortcut Eggs Benedict (No Poached Eggs)
A delicious eggs benedict drizzled with Hollandaise sauce.
Ingredients
- 4 pieces of sliced ham
- 4 eggs
- 2 English muffins, split
- packet of Hollandaise sauce
- PAM Spray Pump Olive Oil
Instructions
- Put the muffins into the toaster.
- Spray PAM Spray Pump Olive oil on the skillet. Heat the skillet on medium low heat. Add the ham, cooking for 1 minute each side until slightly browned. Set aside.
- Next, cook the eggs all over easy.
- Next, cook the Hollandaise sauce according to the packet instructions.
- Place the toast on a plate, followed by the ham and eggs.
- Drizzle with Hollandaise sauce.
- Serve warm.
