This is an easy, chicken artichoke bake casserole that you can make on any weeknight!
Weeknights get kind of crazy for me. Between juggling picking them up from school, attending extracurricular activities after school and dinner time, my goal is to make a homemade dinner as easy as possible and the cleanup afterwards a little easier.
Last year, I made an easy and simple chicken artichoke casserole that has become my favorite to make during the weekday. My family loves it too! It literally takes only a few minutes to prep and 30 minutes to bake while you are whipping up another easy side dish or, better yet, getting a load of laundry in!
Cleaning up is a breeze. I know what you are thinking - casserole means baked on messes, right? Wrong!
Using the new Scotch-Brite® Heavy Duty Scrub Dots Sponge and Scotch-Brite® Non-Scratch Scrub Dots Sponge during my pre-rinsing routine before the dishwasher makes cleanup a breeze. It features Scrubbing Dots technology, which allow the sponges to rinse clean.
Scotch-Brite® Heavy Duty Scrub Dots Sponge eliminates baked on messes while the Scotch-Brite® Non-Scratch Scrub Dots Sponge safely cleans all cookware without scratching. I stocked up at Walmart this week because there is an awesome deal on these Scotch-Brite™ Brand sponges.
Check out this great deal on Scrub Dots below for $1.00 off any two Scotch-Brite® Scrub Dots items!
My kids also love using the Scotch-Brite® Heavy Duty Scrub Dots Dishwand when they are helping out with the dishes because they don't have to pour the dish soap on.
Without further ado, I'm sharing with you my delicious artichoke chicken casserole that you can serve up with a quick side of green beans and a box of cornbread.
Ingredients for Delicious Chicken Artichoke Bake Casserole
1 15-ounce can artichoke hearts, drained and chopped
1 cup grated Parmesan cheese
1 cup mayonnaise
1 pinch garlic powder
6 skinless, boneless chicken breast halves cut into strips
olive oil spray, for greasing
Directions to Bake Artichoke Chicken Casserole
Preheat oven to 375 degrees.
Chop the artichoke hearts in a processor.
This is the quickest way to do it! Why get a knife and a cutting board when you have modern conveniences, am I right?
In a medium bowl, mix together all the other ingredients - the chopped artichoke hearts, Parmesan cheese, mayonnaise, and garlic powder.
Place chicken strips in a greased baking dish.
Pour the artichoke mixture evenly over the chicken.
Bake for 30 minutes, uncovered, in the oven until chicken is no longer pink in the center.
Serve it up!
And when you are done, use new Scotch-Brite™ Brand Heavy Duty Scrub Dots Sponge and Dishwand to make cleanup easy.
