    Southwestern Bean and Corn Wonton Cups

    I love the holidays because of how it brings families together. With our four children being all under six, we've been introducing family traditions it seems like every year to our new additions!

    One tradition that I love the most is Christmas Eve, our families often serve up a large table full of appetizers buffet style! The appetizers would actually be our meal for that night. Who doesn't love a variety of food to snack on during Christmas Eve?

    Having multiple appetizers to prepare for the night also means having a need for a few shortcuts. I stopped by Walmart to pick up some ingredients for the next few weeks.

    For the recipe I'm sharing below, I used the  MorningStar Farms® Chipotle Black Bean Crumbles™ which provides a blend of bold southwest spices with the flavors of chili and cumin.  This recipe is a great option for all holiday parties/gatherings, including Christmas and New Year's Eve meals/parties! You've got to "Taste It To Believe It" that it's not made with meat!

    Ingredients for Southwest Black Bean and Corn Wonton Appetizer

    24 wonton wrappers
    1/4 cup chopped fresh cilantro
    orningStar Farms® Chipotle Black Bean Crumbles™
    1 bag of whole kernel corn, drained
    1/4 cup sour cream
    1/4 cup of shredded cheese

    Directions

    Heat oven to 350ºF.

    Criss cross 2 wonton skins across from each other into each of the muffin cups, making sure you press the skins against the bottom and the sides.

    Bake for 8 minutes until light golden brown. Remove from the pan.

    Cook MorningStar Farms® Chipotle Black Bean Crumbles™ per instructions. Add in corn.

    Spoon mixture evenly into wonton cups.

    Top each cup with 1/2 teaspoon sour cream.

    Garnish with cilantro.
