These delicious mini ice cream cookie cups are delicious and easy to make.

I cannot believe that school is starting for some students starting next week! That means, for some, these are the last few days to enjoy the sun in all its glory! What better way to celebrate than to savor the deliciousness of a Banana Split ice Cream Cookie cup! My family loves this recipe - and its so fun to make.
Ingredients for Mini Ice Cream Cookie Cups
Here are the ingredients:


It features this guy: Blue Bunny's Banana Split Ice Cream.

Cream together the butter, sugar, brown sugar, egg, and vanilla. Yum! Then add the flour, salt and baking soda.

Roll them up evenly into balls into a muffin pan. Put it in the oven for 15 minutes at 350 degrees.

While that's going, get the chocolate ready by microwaving in intervals of 20 seconds with the coconut oil.

And then, take out the cookies and press down with a spice jar to make the indentation for the cups.

Then let them cool. I could seriously eat these on their own:

Get your ice cream scoop and Blue Bunny's Banana Split ready to scoop into the cups.

Along with the sliced strawberry and banana!

Now put it together: cookie cup, scoop of ice cream, spoon of chocolate mixture, and top it off with strawberry and banana. Yum!!!

A bite-size Banana Split in a cookie cup that is delicious!
Ingredients
Cookie Cup:
- 1 stick butter
- 1/2 cup sugar
- ½ cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- ½ cup flour
- ¼ teaspoon salt
- ¼ teaspoon baking soda
- 1 sliced banana
- 3 sliced strawberries
Chocolate Syrup Shell:
- ½ cup mini chocolate chips

- 3 cups ice cream
Instructions
- Preheat the oven to 350 degrees F.

- In a separate bowl, mix flour, salt and baking soda.
- Slowly incorporate the flour mixture to the cream mixture.
- Divide into 12 balls and place each in a muffin pan.
- Bake for 15 minutes.
