Easy Seven Layer Pea Salad Recipe

I wasn't always a fan of small towns. In fact, I was completely against it. Until my realtor told me that one specific town had a great school district. At that time, for my future children - I was sold. And guess what? I fell in love with that small town feel. We now live in a town of 8,000 people (but within a 20 minute driving distance to the nearest metropolitan area).

I'm not sure why I was so against small towns. I think my initial reaction was that there wouldn't be a lot of opportunity or advanced schooling in a small town. But I was so wrong. My kids have the opportunity to play in any sport their little heart desires because the town is small enough that everyone gets a chance. How cool is that?

What I also love about our small town is that the entire town shuts down for the high school homecoming parade. Yep. As a scout troop leader in our town, I had the opportunity to convince my husband to use his trailer as a parade float for our troop. Last year, my girls were on the sidelines catching candy. This year, we were in the float. If that's not enough to convince you how much awesomeness and opportunity there is for living in a small town, I'm not sure what will.

After the homecoming parade, I wanted a quick and easy meal for the family post-float celebration. I stopped by Price Chopper to stock up on Tony's Pizzas.

Right before the hometown homecoming parade, I prepared an easy to make seven layer salad to pair with Tony's pizza that you can make too!

Ingredients for Easy Seven Layer Salad

Salad:
1 package of salad greens
2 stalks of thinly sliced celery stalks
2 sliced green onions
1/2 cup of chopped bell peppers
1 package of frozen peas
6 hard boiled eggs
12 sliced of cooked bacon crumbled
3/4 cup of shreded sharp cheddar cheese

Dressing:
3/4 cup of mayonnaise
1/4 cup of sour cream
tablespoon of sugar

Directions for Easy Seven Layer Salad

1. Top the salad ingredients in this order: greens, celery, onions peppers, and peas.

 

2. Mix the dressing ingredients together. Spread the dressing over the peas, completely covering the salad.

3. Top with sliced hard boiled eggs, crumbled bacon and sharp cheddar cheese.

4. Refrigerate for an hour up to 8 hours. Serve chilled.

It really is that easy to pair Tony's Pizza with this simple seven layer salad.
